Orange-Cranberry Overnight Oats

Makes 4 servings (15g protein and 9g fiber per serving with soy milk)

In a medium mixing bowl, whisk together the following ingredients until smooth. 

  • 3 cups plant-based milk (any kind)

  • ½ cup water

  • ¼ cup date sugar, date paste, or date syrup (or less, if dishes are often too sweet for you)

  • 2 teaspoons orange zest (well-packed), from 1 or 2 oranges

  • ½ teaspoon cardamom

Stir in the following ingredients with a spoon.

  • 2 cups old-fashioned rolled oats

  • ¼ cup flaxseed meal

  • ¼ cup hemp seeds

  • ¼ cup dried cranberries or chopped dried cherries

Divide the mixture into 4 containers. Cover the containers and refrigerate for at least 8 hours. The oats will last 5–6 days in the refrigerator. They can’t be frozen.
