Garlicky Cheesy Polenta (Instant Pot)

It’s amazing how much easier it is to make polenta in the Instant Pot instead of on the stovetop. So much less hassle: whisking, simmering, watching it burp half-done polenta all over your stove, burning on the bottom. With the Instant Pot, you whisk together the ingredients, set it, and walk away. Results are delicious!

Makes about 4.5 cups of polenta

Whisk the following ingredients briefly in an Instant Pot or other pressure cooker until combined. 

  • 4.5 cups water

  • 1 cup polenta (not instant)

  • 1 teaspoon salt

  • Several grinds of pepper

Cook on “Manual” setting 9 minutes. Use the 10-minute release method, releasing the pressure manually after 10 minutes once cooking is done. Open the lid and whisk the following ingredients into the polenta, making sure the entire mixture is homogenous and creamy. Add additional hot water if you want the mixture to be thinner.
