GV comments: This is a delicious and (bonus!) low-calorie dish. The Mexican-inspired spicing makes this not just a "good for you" lunch or dinner but a delight to eat. The roasted chickpeas are much more than a topping--they are integral to the flavor and nutrition of the dish. Of course, "cauliflower rice" is one of the best recent innovations in a while: you get all the advantages of a cruciferous vegetable but the sensation of eating a tasty starch.
