GV comments: This is a great way to eat legumes. Shawarma is a traditional Middle Eastern way to cook meat and serve it as a sandwich or wrap with salad and toppings. Dana, the Minimalist Baker, has nicely substitute lightly spiced and roasted chickpeas for the meat and then provides the recipe for a wonderful garlic-dill sauce as well as other additions to the sandwich. The hummus in the sauce adds even more legume-based protein and fiber. This can be taken to work by keeping the fillings, sauce, and bread separate, then wrap them together when you're ready to eat. Healthy and delicious!
