GV comments: This is a lovely butternut squash soup. There are many recipes for this type of soup, but I like this one a lot because of the coconut milk and the subtle curry spicing. Many butternut squash soups can be bland, watery, or both. None of that nonsense here. The robust silky texture stands up to the ginger, turmeric, cinnamon, and cumin.
Timing: 45-60 minutes
Nutrition: Whole-food unprocessed if you leave out the two tablespoons oil for the initial saute.
