Veggies and Lentils in Peanut Sauce

GV comment: This is easy, delicious, gluten-free, and very healthy. If you like peanut sauces, try this. The combination of peanuts and red lentils is fantastic. I doubled this to serve five, and there was still some left over.

Nutrition: Mostly whole-food unprocessed (a little oil and a little sugar only)
