GV comments: I love this soup. It one of those "best all around" types of soups: healthy, delicious, and pretty to look at. The lentils give it protein, fiber, and substance. The sweet potatoes are the stand-out ingredient. The spicing (coconut milk, cilantro, lime, ginger, curry powder, red pepper flakes) is mildly Thai and soothing. This is a perfect cold-weather soup but it works year-round.
Timing: It takes about an hour and a half from start to finish.
Nutrition: Mostly whole-food. If you leave out the oil and either water-saute the starter-vegetables or microwave them in a little water (which I do), it's all whole-food, unprocessed (if you count canned coconut milk as unprocessed).
