GV comments: This dish has a lot of things going for it: it's pretty to look at, it's novel (not same-old same-old), it's packed with strong contrasting flavors (cauliflower, capers, red onions, lemon), and it's healthy. I mean, what else is there? It's not a saucy pasta dish, so you might consider pairing it with something on the creamy side, like Marisa's Baked Beans, No Cream Creamed Spinach, or maybe Sweet Potato Puree. With a green salad, you've got a meal!
Timing: Around one hour, including the 40 minutes to roast the cauliflower.
Nutrition: Mostly whole-food (would be 100% whole-food except for the oil needed for roasting, and I haven't found an oil-free way to do that).
Gluten-free if you use gluten-free pasta.
