GV comments: This is a wonderful risotto-like dish that's easy and flavorful. I categorized it as an entree because you could combine this with roasted vegetables (either individual vegetables like the ones found in the Guide to Roasting Vegetables, or else Lori's Montreal Vegetables for a combination). When I make this, I leave out the butter. If you like butter flavor, you can use a vegan butter (like Earth Balance). It can be the center of a fantastic fall or winter meal, for family or guests.
Timing: About an hour, most of which is the cooking time.
Affordability: Between $5 and $10, depending on the mushroom prices.
Nutrition: Could be whole-food unprocessed if you water-saute or microwave the aromatics and you leave off the butter. Otherwise it's "Mostly whole-food."
