GV comment: Like the Thai Red Curry with Vegetables, this curry is healthy, comforting, and filling. Potatoes, green beans, carrots, and red peppers star in this curry, although you can substitute if you like. I love the additional of cashew butter (though peanut butter works fine as well). You can order yellow curry paste online (from Amazon or elsewhere)--it lasts a long time in the refrigerator after you open it, so it will serve for many yellow curries to come. 

Timing: about 45 minutes

Nutrition: Whole-food unprocessed (if you water-saute or microwave the onions)
