GV comments: This is one of the best vegan sauces I've tasted. Plus it's fast and easy -- a rare combination. I make this a lot. It has the creaminess of a classic vodka cream sauce, but without the cream! The cashews and pine nuts really do their job here. The key is to blend the soaked nuts for as long as it takes to get them smooth. Otherwise it may taste a bit gritty. I love roasting up a lot of vegetables, cooking some pasta, then letting everyone decide what they want under their sauce. It makes for a fun buffet dinner.
