GV comments:  While there are many recipes for vegan broccoli soup, this one balances start-to-finish time (about 30 minutes plus time for dicing vegetables), taste, and low calories. I never use two tablespoons of oil--you don't need that much; in fact, I often make it fat-free by microwaving the onion, celery, and garlic instead of sauteing them. The potatoes make for a nice texture. I might have a slight preference for Isa Chandra Moskowitz's Cheddary Broccoli Soup, but this one is best when you want simple and low-fat. 

Timing: around 45 minutes

Nutrition: Can be made whole-food unprocessed
