Cheddary Broccoli Soup

"Your Vegan Neighbor" reproduces this recipe here, but I highly recommend buying Isa Does It. The cookbook has so many quick, delicious recipes that you won't regret it. 

GV comments: This soup really hits the target for broccoli-cheese soup. You won't miss the dairy--in fact, the texture is smoother and creamier than dairy-based versions. The nutritional yeast and cashew cream make the difference. I always end up using my finger to get up every last drop of soup in my bowl. 

Timing: Over 2 hours (because you have to soak the cashews)

Nutrition: Can be made whole-food unprocessed
