It fills you up without adding a lot of calories, it boosts your vegetable intake for the day, and it's a perfect companion to a salad or sandwich. If you have some vegan pesto around, I suggest adding a spoonful of it to the hot bowl of soup and stirring a bit (but not completely). The soft swirls of pesto are a delight to come upon as you eat the soup.
