Sweet Potato Puree with Browned Butter Maple Syrup

GV comments:  I never liked sweet potatoes with marshmallows on top, and I eventually found out that marshmallows contain gelatin (made from animal bones). I love this recipe as an alternative to that overly sweet dish -- just the right amount of brown sugar and maple syrup to complement the potatoes' sweetness. Perfect for the Thanksgiving table or any other dinner that needs a counterbalance to a salty main dish. This is also a marvelous way to take sweet potatoes to a potluck. I use Earth Balance margarine instead of butter. 

Timing: 60-120 minutes
