GV comments: This has two major advantages. First, it's delicious. Second, it's a great vehicle for lentils, one of the healthiest foods on the planet. The red lentils cook down so much that they form the thick sauce of the stew. I use half the oil recommended (that's my general approach to oil in recipes). It works well. This is an omnivore-pleaser.
