GV comments: There aren't many recipes for "pasta al forno" in the vegan world, because they all traditionally have lots of cheese in them. This one really works, though. The cashew cream provides the creaminess, and all the other flavors are just natural companions in Italian dishes, so... it works. If you don't use the small amounts of oil, it's entirely whole-food, unprocessed. The spinach is healthy and provides a nice contrast to the pasta. The affordability of this dish is based on buying store-bought basil. If it's summer and you can find it cheap at a farmers market, this will be a very inexpensive dish.
