Crazy for Carrot Cake

GV comments:  I thought I would never taste carrot cake again after giving up eggs and dairy, but this brought me back from deprivation. It’s as good as my old recipe, if not better. Everyone loves this cake. I must say, though, that I don't like commercial vegan cream cheese, so I don't make the cream cheese frosting in this recipe. I recommend "Easy Cream Cheese Frosting" from www.veganbaking.net.
