Smothered Cheese Grits and Steamed Greens

GV comments:  I use vegan cheese instead of dairy cheese and non-dairy milk instead of low-fat milk in this recipe. Sometimes I leave out the caramelized onions, depending who I'm cooking for. The basic combination of grits and greens is a deeply satisfying one, whether you include corn or not, include cheese or not, or leave in the oil or not. If you can't bring yourself to eat grits, you could use polenta instead. This makes a nice addition to the Christmas table with the dark green kale. (Note that the recipe doesn't mention slicing the onions, which, of course, is crucial.)
