GV comments: Here's a great, easy way to get more legumes into your diet. This taco filling tastes a lot like ground beef taco filling, so omnivores will likely be fine with it. Bury it under lettuce, salsa, avocado, chopped onions, and any other favorite toppings in a tasty corn tortilla, and no one has to know the details. I alternate between a taco filling recipe using textured vegetable protein (TVP) and this one. I love them both, but lentils get the edge on nutritional value. I alter the recipes in these ways:
- I chop all the vegetables in a food processor so they're small, then I skip the final step of putting the whole dish in the food processor -- I find it makes it too mushy.
- I increase the mushrooms to 2 cups (8 medium mushrooms)
Timing: About 60 minutes, including 30 minutes cooking time
