Below you’ll find links to my favorite recipes for roasting vegetables. Nothing fancy here—just high oven temperatures, olive oil, salt and pepper.
You can add spices to these basic recipes—maybe Montreal steak seasoning, spice rubs, Cajun seasoning, or other favorites. Start with 1 teaspoon of added spice mix per pound of vegetables and adjust the next time if not enough or too much. Just remember to decrease the added salt if your seasoning has salt in it.
