Creamy Vegan Balsamic Dressing

Makes about 3/4 cup of dressing

It took me a long time to work out a pleasing balsamic dressing that tasted like restaurant versions but without regular mayonnaise. After trying a number of recipes, I found the Food Network’s take, and with some tweaks I’m very happy with this version. 

Blend these with an immersion blender in a slender container (preferably the one your immersion blender came with).

  • 2 Tablespoons balsamic vinegar
  • 2 Tablespoons vegan mayonnaise
  • ½ teaspoon (one clove) garlic, chopped
  • 1.5 teaspoon sugar
  • 1 Tablespoon lemon juice
  • 2 teaspoon Dijon mustard
  • ½ teaspoon salt

Then trickle in the oil while blending on the low speed to create a thick dressing.

  • ½ cup olive oil (or try canola oil or mixture of the two)

Timing: Under 30 minutes
