GV comments:  This easy, healthy recipe combines healthy vegetables with a scrumptious peanut sauce. You could take the vegetables, sauce, and tortilla to work for lunch and put the sandwich together when you're ready to eat (so it doesn't get soggy)--you'll be the envy of your office mates. It's not a hot sandwich, so it may not be right for dinner if your crew likes hot dishes for dinner. But paired with a good soup--and a fruit salad if you have time to whip it up--it would be a filling and delicious meal.
