GV comments:  For those who think eating diary-free means no more cheesecake, think again! These are delicious and creamy and will satisfy your cheesecake cravings. (The Minimalist Baker also has a key lime pie version of this recipe, which is also wonderful.) The crust is tastier and healthier than a graham cracker crust, and the optional add-in toppings are to die for. It’s critical to get the cashews soaked for hours and blended to a very smooth consistency. Also note that these are frozen desserts, not room-temperature cheesecakes. I will soon be posting a baked cheesecake recipe that can be served at room temperature.
