GV comments: The variety of flavors and vegetables makes this soup very satisfying. I like to use more tortillas than the recipe suggests and then stir them into the bowls of soup so that the tortillas really become part of it. With a coleslaw and/or some baked sweet potatoes, you’ve got yourself a filling meal. This comes together easily.
