GV comments: I am obsessed with finding good falafel recipes—they are rarer than you might think. This is an excellent recipe for quick preparation. The real thing in the Middle East involves soaking raw chickpeas for 24 hours. You can use canned in this recipe, and the results are pretty close. I never use as much oil for cooking them as recipes suggest--I recommend using as little as possible to pan-fry them. Falafel is not a spicy dish, so everyone should enjoy them--in fact, I haven't met anyone who doesn't love falafel.
