Vegan Yeehaw Ribollita

GV comments:  Ribollita soup is a traditional soup originating in Tuscany. It is a tomato-based vegetable soup similar to minestrone, but bread is added toward the end of cooking. This recipe requires a crock pot and leaving it alone for 4 hours while you do other things. You could adapt it for the stove top if you feel comfortable doing that. It's an excellent version of a classic, filling soup.
