GV comments: This recipe is awesome. It's not spicy-hot at all, and the peanut butter and coconut milk blend together to form an very tasty foundation for the vegetables. This makes enough only for two generous servings. I highly recommend at least doubling the recipe so you can feed more than two and/or have leftovers. I also recommend not putting in all the water at first until you see how thick or thin it is. Maybe start with a half-cup and simmer a bit, then see if you need more.
